How to start a kenkey or waakye business in Accra

Selling cooked food from a table, a window or a stand is the most common business in Accra. It is also the one most often dismissed as not a real business, usually by people who have never worked out the margins.

A seller with a following and a good spot can clear more in a day than a junior office worker, and does it in cash.

What it costs to start

Roughly ₵500 to ₵3,000 — the lowest barrier to entry of any trade on this site.

Where it works

This trade wants density, cheap premises and a working population, in that order. It does not want a smart address — it wants people walking past hungry.

But the district is the easy part. The spot is the business:

Near a lorry station, market, school, workshop or junction.
Where people already stop, not merely pass.
Where you have permission to be, from whoever controls that ground. This is the step outsiders skip and locals never do.
Not directly beside somebody selling the same thing, unless you have agreed it.

The paperwork

Environmental health clearance and a food handler’s medical from the district assembly. Food is inspected; this is real and enforced.
Business operating permit from the assembly.
Register the business with the ORC — needed for a MoMo merchant wallet and any supplier credit.
FDA registration if you start packaging and selling through shops rather than cooking to order.

The economics, honestly

Your margin is the gap between this morning’s market price and what people will pay at noon — and you cannot reprice daily without losing customers. So the trade is really about:

Buying well. Bulk, early, and from the same trader until they give you credit and a price.
Selling out. Unsold cooked food is a total loss. Cooking slightly less than you can sell beats the reverse every time.
Consistency. Regulars come for the same taste and the same portion. A seller who is inconsistent is training people to try elsewhere.
Volume. Small margin, many plates. There is no other route.

What closes food stands

Eating the working capital. The ingredient money and the household money are the same pocket. Separate them physically if you have to.
Losing the spot — a development, a clearance, a dispute.
Cooking to the wrong quantity, repeatedly.
One bad hygiene episode. Word travels the street faster than any review.
